Well I didn't make the chili yesterday but have a pot simmering and filling up the air so wonderfully right now. We finished off the sub stuff and salads I had made up yesterday.

Now anybody have a nice plain and simple guacamole recipe you would like to share? Mine uses mayo in it and I am trying to cut down on things using mayo. Can't have hot or spicy stuff or the kids won't eat it. I would rather use one of your TNT than to do a search on the Intenet it is like a crap shoot to me with recipes.

Jax-why not mash it with chopped garlic, tomatoes some lime juice.

Take two medium sized ripe avocados. Put 1 smallish clove of minced garlic on top. Squeeze with juice of half a lime. Mash together gently with a fork.

Salt to taste, taste again to see if you have enough salt. Can also sprinkle to taste with Chili Powder.


Now I would add a diced roma tomato and a jalapeno and minced green onion to this, but then it's not so kid friendly..

Good guacamole depends mostly on the quality of your avocados, of course.

1. The quickest and easiest and tasty guacamole can be made by mashing up 2 avocados (they must be ripe enough to mash but not over ripe or brown from being kept too long in cold storage) and adding some salsa that you know you like ......that will be a fine guacamole.

2. or by adding chopped tomato and onion to your mashed avocado ....cilantro is a good addition...lime juice is good as is a seeded and finely chopped hot pepper at your own discretion .

I make my guacamole with 2-3 avocados mashed, a small onion, finely chopped, 1 or 2 chopped garlic cloves, juice from half of a lime. Mix all together and I top it off with chopped cilantro. Yummy!

No cooking for me tonight, dinner is out, not sure where yet.

Thanks guys for your input. My recipe does have minced onions and chili powder so they do eat that. Now if I just mash, put some garlic, lime juice and chopped up tomatoes will it be creamy type like served in Mexican restaurants? See I always thought the mayo is what made it creamy.

I don't know which restaurants you mean, but in my opinion, good guacamole should not have any fillers like sour cream or mayo.
