Home-made chili with beef stew meat. I'll top it with green onions and Cheddar cheese. A mixed greens salad with Ranch dressing.

What do you mean by "mini-meatloaves"? A burger kind of thing?

I guess you could call them a burger kind of thing, as much as you might call meatballs a burger kind of thing. They're individual meatloaves made in a muffin pan, instead of making the meatloaf one big loaf. I use my regular meatloaf recipe to make them, but only bake for 20-30 minutes, until the center is 160 deg. F.

I make a Pakistani-style meatloaf, a blob of seasoned ground beef about 7" wide, like a huge burger, on a roasting pan that lets the juices drain. It has more outer browned surfaces than a traditional meat loaf. I mix saffron, cardamom, ground coriander seeds and cinnamon into the ground beef, and I mix some fresh chopped cilantro in it. It's yummy.

Just casual and quick tonight: foot-long chili dogs, sauerkraut, sweet potato fries, sangria and the remaining caramel ice cream cupcakes for dessert.
