I add shredded celeriac (that's similar) to coleslaw and sauerkraut, or slice it up to add crunch to salads. It makes pretty fair shoestring fries as well.
Celeriac grows easier up here and it keeps better than stalk celery.
It is where you take celery and then put peanut butter in the inside (well) part of it and then put raisins on it. It looks like ants on a long. So yummy and a healthy snack too.
Seriously, I like it plain. I like it chopped in tuna or chicken salad. It's a must in potato salad. It goes into Vegetable Beef soup. I love a nice Cream of Celery soup. Stuffed with peanut butter.
For those who don't care for celery, it's perfectly normal. Nobody likes everything.

This is a really unique idea. Thanks. Never thought about it before but would make an interesting addition to a jar of lacto-fermented vegetables -- even from a visual aspect.
