We are having a late brunch with a smoked Gouda/ham and corkscrew pasta casserole, a cheesy egg boat, fresh mixed fruit, roasted Brussels sprouts, homemade hot cross buns and Mimosas. Our son, DIL and two grandkids will be coming over to join us.

We will have three guests this year, which is much better than the empty house and Chinese take-out we had last Easter.

Still not sure of the main dish, but here are my sides. - New England corn pudding with Vermont Cheddar, sweet potatoes, and carrots baked with apricots and topped with toasted pecans, slightly chilled Hungarian style potato salad (I adapted this recipe from one given to me by a friend whose husband is Hungarian) asparagus - not sure how I am preparing it. A huge crispy spring salad with baby spinach, chopped celery, carrots, multi-colored grape tomatoes, green onions, and snap peas. I am making a very tasty buttermilk-based Herb Rach that is out of this world.

My son's fiance and he will be making a dessert, and the three of us are making a homemade carrot cake with cream cheese frosting.

In the UK, Easter is a national holiday, and includes Good Friday, Easter Sunday and Easter Monday, so is basically a four day national holiday for most working people, which is great if you get some nice spring weather.

Ready cooked chicken, mashed white potatoes & mashed yams, broccoli w/ olive oil & cheese, grainy bread & maybe a tomato, cucumber & olive salad. Dessert ?

We're hosting the family, so we're smoking pork loin. Also serving sauteed cabbage, green beans almondine, sangria berry gelatin, and cheesecake, iced tea and wine. I doubt there will be leftovers.

Weather looking good enough to serve al fresco on our huge deck table.

We usually just dyed and decorated a dozen eggs. Since there 6 of us, they didn't last for long. We also used to hide the eggs for each other to find. My one older brother used to hide eggs in crazy places and one would always be missing at the end of the day. We'd finally find it when it started to stink.

I remember the pysanky eggs the the Ukrainian women made to sell at the church fundraiser.
