First time I've had WiFi in a couple of days, but it's been dicey & so have the hotels.

I'm 1/2-way there (through pouring rain the whole time, flash flooding & tornado warnings), so, eh, hotel food... got some fried deli chicken from a local market called Hy-vee. It was awful... tossed the coating & bones & more than I ate. I've got a couple of my least fave fruits for later... apples. But, they travel well, even when dropped & rolling around on the car floor for the day... try that with a grape.

I hear the grill calling today. Just waiting to answer the call are some chicken thighs and some asparagus wrapped in pancheta (ok we all know I can't spell) ham and maybe some mushrooms and bell peppers. To finish the meal off will be a small fruit salad.. I am doing I haven't done is probably 10 or more years: I am buying a small can of fruit for the salad.As we all know the fruit season is pretty well gone and I need one more kind of fruit: I can either drive all the way to Walmart for bananas for one more fruit or I can stop at the $ General after church and pick up a can of something. Stopping is more to my liking than fighting the crowds at WalMart on Sunday.

I will have an easy cooking day. I think I will just pull some chili out of the freezer and serve over spaghetti. I'll dice up some onions and grate some cheese for on top. I also have some leftover salad to go with it.

Pork loin off the rotisserie, buttery baked potatoe wedges, mushroom gravy, green beans, big green salad. Burp!

We have coleslaw to use up, so maybe we’ll have burgers. Lemon meringue pie.

Home made bean soup with ham. Diced onion on top. Cornbread if I get motivated to make it. Fruit salad for desert.

Tonight (or rather, this afternoon as I'm still on my insanely early schedule), slow-cooker garlic-lime chicken ...


Basically, put some bone-in, skin-on chicken thighs in the crock pot, add chicken broth & lime juice & garlic & thyme, turn the slow cooker on, add rice about 15-20 minutes before you want to eat ... that's it!

It was very good, and so easy, and lots of leftovers for the next couple of days. I love my slow cooker!
