Tonight I went for simplicity: bbq chicken with corn and onions. I had a package of boneless, skinless chicken thighs defrosting in the refrigerator, so I took half of them (5), trimmed the fat, basted them with Sweet Baby Ray's BBQ sauce, and baked them for 30 minutes, turning once and basting again. Had them with stir-fried onions and corn ...



Next time I have this (likely tomorrow, since I have 3-1/2 thighs left!), I will cook the corn separately from the onions, simply because I LOVE the taste of onion and bbq chicken together so I had to keep picking out the onion, LOL! Anyway, this was a very simple dinner and SO good!

Looks and smells just divine, omg I'm so lazy.

My new made up recipe tonight. Taco Spaghetti...amazingly it was pretty good.

i'm having what i had last night. fried chicken tenders, salad and spaggetti. i made too much so i guess i'm eating the same meal twice.

i'm going to go buy some chicken thighs to bbq, those look yummy.

I guess you’d call what we had beef Parmesan, or cube steak pizza?
Breaded cube steaks, sautéed, then topped with pizza sauce and mozzarella. Baked potatoes and broccoli.

It was experimental, but it wasn't bad.
