Default Souvlaki recipe

5 cloved garlic, minced
1 tsp coriander seed, crushed
1/4 C FRESH lemon juice (pulp and seeds ok!)
2 tsp fresh ground pepper, or to taste
1 tablespoon oregano ( 2 if you can lay hands on fresh Italian or Greek)
2/4 pounds pork loin, chicken breast, or lamb, cut into 2" cubes
EVOO to cover

Place meat in plastic gallon baggie or non-reactive bowl, add first 5 ingredients, add olive oil to cover, stir and cover. Let marinate at least 24 hours, stirring occasionally.
Thread meat on skewers and grill, or bake on broiler pan in 350F until done.
Serve on flatbread with tzatziki sauce, tomatoes and onion, or as entree with sauce on side.

Tzatziki sauce

8 oz greek yogurt (or sour cream if not available)
2 tablespoons olive oil
1 cucumber, peeled and seeded
1/2 lemon, juiced
2 cloves garlic, mashed
Place cucumber in food processor/blender and puree, add rest of ingredients and pulse, cover and refrigerate for at least an hour.

The final menu for tonight is shaping up to be pan fried cubed steaks smothered in pan gravy, nuked potatoes with some pan gravy on them, fried okra, and a big juicy tomato cut into wedges...with some real good green tea.

was wondering where you were, wanted to tell you how wonderful the home grown tomatoes I had in Mo were..... no matter what I do, mine are just not as good, must be the soil.
I also had some really wonderful peaches from Campbell, still appreciating how good they were, 2 weeks later!
BTW, thanks for the well-wishing in the rep you gave me!
