Lisa it could be the potatoes but did you soak them overnight?
Soak them in vinegar water overnight or after 4-5 hours then rinse. I put about 6 cups of water and about 1/3 cup of vinegar cut my potatoes in and let them sit. Then I rinsed them and canned them raw..with a little salt. The vinegar water really cuts the starch so they don't get cloudy.
I've use red, blue, yellow, or white potatoes. Red potatoes (Red Rose, Creamers, or New potatoes) have the lowest starch, and will hold up the best. I don't even peel red ones just scrub well. Russets don't do well for me.

Jasmin as long as they are sealed the food should be fine. Coloring usually doesn't affect taste just check them when you open the jar. Or if you don't want to wait open them tonight & use them for supper.
I made another Batch yesterday and added NO salt and I let them rest overnight in water which took a lot of starch out cause they came out a LOT better.
I am happy to report that me and the Canner are getting allong ! waiting for Chicken to go on sale and meats to make my Stews !

I'm not going to put my canner too far away this year. I want to keep doing bits and pieces of things as they come on sale. I too, would love to get some chicken done up, so that it's ready to go. I don't know why, but my bones are saying that we could have a nasty winter out here on the coast and it would break my heart to lost everything in the freezer, do to an extended power outage. LOL
gonna do carrots yet........ then off on to Soups and stews..... anyone have any awesome recipes they want to share?
wow, it looks like you have done your share and ours as well. I am just about to finish up for the season. I am going to do apples and apple sause on Tues plus, hopefully tomatotoes and sause.
Congrats Jasmin!! Looks like you've got quite the haul put away there!! We finally got the last 5 tuna and put them in 10 oz jars (55 of them). We now have 91/10-oz and 36 pints. That ought to get us through til next year! I was beginning to wonder if we were going to get those last ones. Man, it's good to have that smelly, oily mess out of the way! LOL
Looking for carrots at this time,,,, still hoping for Apples but not looking good ...very pricey.
I am out of room so I was looking at more cabinets ....... I keep telling hubby lets sell the House so we can buy a House with a Basement lol
