Have to admit, I'm kind of lost on the whole Theon story line. It's not even talked about in the book, at least not yet and I'm pretty far into it. Was wondering how they were going to wind the Sansa story line back around since they seemed a bit off course there for a bit. Forgot how much I enjoy the Jamie and Brianne storyline too!

In current adaptaions, in reference to the movie Tombstone, it means "I'm your man." as an affirmative response to a challenge.
Yes, the Theon story line doesn't show up until much later, and then in flashbacks (if I remember correctly; trying not to give anything away! ). Here we get it as it unfolds, which is not a bad idea, and may even have creative aspects that aren't in the book. Very nice twist, with the Bolton bastard (Rancid, whatever his name is ). Poor Theon, finally realizing that he lost his real father when Ned was beheaded...
