Yes it's a 'win' for them and the family since it's much easier to accept as a mercy killing/suicide and not as an obsessed creep that couldn't bear to live without her love.

You figure one or other would have done something, anything to record their last moments either through photo or video on cell phone. Or a last goodbye from him as he apologizes for what he is about to do.

If they died the same day, the phone batteries would still be working. Otherwise--not. All we know is, someone tried to make a cell phone call at 4 p.m. the first day. Therefore, that day, their phones were charged. There are conflicting reports as to whether it was her phone or his. There's no info about police examining their phones, which seems odd to me. His dad said his son was maintaining daily cell phone contact, he said he and his son were close, but that on the day of the hike, his son didn't contact him at all. The two didn't begin the hike until 11:00 a.m, IIRC, so there was plenty of time for his son to call or text him, "We're heading out, now! We should be back by mid-afternoon or so. Talk to you later!" or some such.
Remember, the route they took is a popular jogging trail of moderate difficulty, so the hike would have taken maybe 2-3 hrs. max, at a walking pace. It wasn't an all-day or all-afternoon hike route.

Just because one of them tried to use his phone, doesn't mean the battery wasn't almost dead. The phone call could have been a last chance effort to call for help. When I go hiking, if I don't turn off my phone or switch to airplane mode, the battery is dead by mid day. When it's searching for service, the battery is drained pretty quickly.
The dad's phone wasn't working, so he doesn't know if his son tried to contact him or not.
All the articles I've read said they started their hike at 6:45 am.

lol I guess another rock wouldn't work in a last chance to say goodbye. Most people would have thought to have used something. we are talking emergency/last chance/dying breath scenario here.

I imagine if I was one of those hikers I would have used ANYTHING to leave a message.
I thought about the message thing too then ultimately thought that if I was near death from dehydration and who knows what else and ready to kill my girlfriend and then myself, I might not be thinking so clearly. Not clearly enough to remember to write a note or even capable of writing a note.
