It is difficult cooking for 2 as I tend to bulk cook srill-so leftovers, freeze some.

nik excellent save on dinner and frugal ways to stretch meat!

Lacey it is hard for me to cook smaller portions as well that is why we end up with leftovers piling up in the fridge. Then having a clean out the fridge night plus my lunches and after school eating from them.

I'm feeling like diner food lately. Last night was macaroni and cheese, ham, and roasted brussels sprouts with garlic.
Tonight is meatloaf, mashed potatoes, and corn.

Well I figured it out. We are having taco casserole. It's kinda like a taco salad but with chips instead of a shell. Hopefully it will be good. Don't really know why it wouldn't, cheese, beans meat. Yum!

We are all a bunch of sick lazy bones today.... cartoons are a wonderful form of entertainment.... and the sofa seems to be my best friend.... And my crockpot is a life saver..... I think Diva might have Strep so the soup might do her good tonight (if she eats it). I made enough for two days...so I am hoping it goes over well.... fingers crossed.

I bought calamari steaks yesterday but not sure what I'm going to do yet beside just breading and broiling. I love them sliced, breaded and fried served with sweet and sour sauce as an appetizer but I don't think that would go over real big for dinner

Sorry to the foodies who are under the weather. I have to make this quick, and dash to the market. Tonight will be a spiced (cayenne style)chicken breast grilled. Tzatziki sauce for dipping. Baked zucchini rounds sprinkled with parmesan chs and italian bread crumbs. Garlic smashed potatos Trying to stay some what healthy. I have been unfaithful to my diet and treadmill. Time to face the music. The fat lady is singing la la la la la

Tonights dinner is T-Bone Steak Au Cognac
easy recipe to make quickly
vegetable oil
t-bone steak
butter
fresh mushrooms sliced
shallots chopped
chopped fresh parley
cognac
heavy cream
salt & pepper to taste
------------------
pre-heat over to 150 F
cook steak in frying pan 10 minutes on high heat on each side.
put steaks in oven to keep warm, then add butter, mushroom, shallots,parsley to pan, season well and cook in pan for about 5 minutes over med heat......
then pour about 1/4 cup of cignac and cook it for about 5 more minutes over high heat....then add cream..cook for another 5 minutes.

then take steaks out from the oven and pour mixture over steak.

I am having this with a baked potatoe & corn.
