Yesterday was my foodie group picnic. So much good food! It may take me days to recover.
Tonight will be BLTs -- one of the group brought enormous gorgeous tomatoes that she grew to share. One slice of tomato will more than cover a slice of bread.
Potato salad.
Oven roasted red bell peppers stuffed with mini tomatoes, shallots, herbs.
Oven baked chicken fillets with sherry & lemon.
Vanilla ice cream with cherries.
I am making turkey quesadillas and leftover salad from last night.
* I think I am going to go marinate the turkey tenderloin in some mango nectar I have lying around. I hope it adds a nice layer of flavor to the quesadillas.
