After scratching our heads at the grocery store this morning we finally decided on buffalo shrimp with blue cheese, celery and carrots. We are having soft pretzels with spicy mustard , we always have a plethora in our fridge, for dessert.

Carnitas redux.

I love the recipe and how they turned out, but it was late and i didn't reduce the sauce and such. PLUS, the tortillas tasted really "doughy", and I did NOT like avocado and sour cream as a topping. Crispy jalapenos, thinly sliced cabbage and green onions worked.

Sooooo, I defatted the sauce this morning and will cook down the sauce tonight before dinner and will toast the tortillas on the stove before serving. Avocados can go on the rice.

It was a HUGE batch, so about half will find it's way into the freezer.

Your dinners always sound so good. I wish I had somebody to cook for me and the bad patient tonight.

I had a ham & swiss, plus served some grocery store deli Chicken Tortilla soup with crumbled tortilla chips, whole chips & salsa. Texas grapefruit and cough syrup (for some) for dessert.
