Vegetarian Black Bean Enchilada bake, tossed salad with cilantro lime dressing.

A margarita for each of us and strawberries dipped in dark chocolate.

A new recipe tonight. Corn and scallion sourdough pancakes and black bean salad with a dollop of my homemade yogurt instead of sour cream. Savory, delicious and definitely making this one again.

With today being Cinco De Mayo on Taco Tuesday we tried to order from the taqueria down in the square by our house. Hmmm....everybody and their brother had the same idea. I tried for a good half hour to get thru to them. I gave up and called the Irish Pub across the street. We ordered an Irish nachos for the four of us to start. It’s kinda Mexican.....

I ordered a rueben for my dinner. After partaking of the potato, bacon, pico de Gallo, cheese, etc extravaganza known as Irish nachos I only took two bites of my sandwich. Oh well now I have tomorrow’s breakfast and lunch!
