We got tired of the gloppy, casserole style of Eggplant Parmesan, so we started doing it in stacks of two, bottom piece of coated, crispy eggplant, fresh motz slices, and sauce, repeat. The cheese helps protect from the sauce turning the coating to mush.
Is there any kind other than casserole-style? Yours looks delicious!
We are having grilled wild salmon, baked potatoes stuffed with cottage cheese and chives, Nappa cabbage, apple, radish, and carrot salad with a maple Dijon dressing.
Apricot filled cookies for dessert. (My son is still here)
Roast beef in hoagie rolls with sauteed onions, peppers, and mushrooms, topped with gruyere, and au jus to dip. I think horseradish is needed.
Probably corn on cob.

A BBQ chain from out of the area opened here this week. I had a brisket sandwich with corn and slaw (slaw was awful). Mom had a pulled pork sandwich with beans and potato salad.
I was hungry and ended up going to McDonald's for some spicy McNuggets around 9:30.
chicken thighs in the air fryer, ratatouille, crusty bread. Peaches with cream & cinnamon for dessert.
