Onions harvested. Not my best year for sure but happy to get some

August 8, 2023:

Harvest of Cukes wont go to waste. Time to slice them in spears



My Brine recipe:
6 Cups of Water
1/3 Cup Regular Salt no Iodine
2 Cups White Vinegar
2 Tablespoons of Dry Dill
10 Black Peppercorns

Bring to boil for 5 minutes then let cool down to room temp. I put cukes in fridge until Brine cools down (took hours)



In the jars I add:
4 Cloves of Garlic
5-10 PepperCorns
Fresh Dill

Add Brine 1/2" from the top. Wipe rim, lightly hand tighten rings not super tight. The lids I had in a small pan of hot water to sterilize them.



Dunk them in the water, bring to a boil and lower heat so it slowly boils for 10 minutes.



Delicious!

Busy day today

5.2 pounds of red potatoes
3.2 pounds of yellows

And couple more onions



The pile of weeds on the right luckily pulled up easy since the soil was loose

Cardboard between the pavers deteriorating but notice lack of weeds between. Works for 5 mths

Cambium, those potatoes and onions look great -- but how do you use up all those potatoes? Do you can some?

I love fresh potatoes but lately haven't eaten them often enough to buy them. Don't tell anyone, but in a pinch I have used canned potatoes (especially in things like curries) and they've tasted great ... but not as good as fresh!

They store well for months so we give some away but mostly just cook with it. Either bake or make fries.

This will be my last year doing Potatoes. I'd rather use the space for something else. And its just hard on my back to dig out the potatoes. Not worth the time and space.

Blasphemy! We usually get 70-100lbs a year and we make mashed potatoes or roasted taters and seal them and freeze them- good for a year or more! Get a tater fork and save your back. Earth apples from the garden are delicious!

Oh my gosh, I'd love to have that potato yield! I didn't realize you could freeze potatoes -- hmmm, something for me to think about for next year. Of course I say that every year ...

Oh yeah, Mashed Potatoes! Mmmm. If I ever expand the beds or buy new property I'll probably continue but I'd rather plant more onions (easy to pull) or Squash in its place. I'll look into the tater fork thanks

Not the Prettiest but .. 1.23 pounds. Forgot which one this was. I think maybe Cherokee Purple



I'm winning against the squirrels. Lost track of score.



Cukes doing well. No beetles. I think planting the radish near them definitely helps



Gave these away to a friend



Last year when I did the lawn renovation I left an area of old grass to see the difference... Wow is it different!!
