OK.... Ah feel your pain.
Here's a suggestion I heard and liked. I never tried it, but it sounds good to get you started. BTW, I never tried it because I no longer need to lose weight or correct cholesterol numbers or anything.
Here goes:
List five dishes that you like SO WELL, that you swear you could eat them every day. Then do it. Eat JUST THOSE FIVE dishes. That's your diet.

Actually, I am not too far from it. My breakfast is ALWAYS a pork chop and an egg. Every morning. Nothing else, and I don't get hungry til around 2PM. After that it sort of varies but not all that much. I won't bore you with details....
Another thing (feel free to throw rocks at me and disagree) - there are fried foods and other fried foods. Most fried foods in most American kitchens are being fried in vegetable oil that is so bad for you, you might just as well fry it it 30W Pennzoil. Use butter or lard. They're both good for you. I LOVE my morning pork chop and my egg fried in a little lard with a little butter.
A third thing: Fruit is not good for you. Your body just turns it into sugar and you're right back where you didn't want to go.

Right, some of the whole foods are good. Even many fruits have a lot of sugar, so one has to watch out. And can't eat every veggie out there either, like for ex, bell peppers are examples of nightshades & there are many out there:

I'm a huge fan of chiles, jalapenos, hot sauces and many nightshades, but yes, agree with the rest of your list. It's very easy to avoid the other items, not sure why you think "pretty much everything" would contain those other items.
