4-301.11 Provide enough equipment to maintain all cold-held potentially hazardous food at 41 F or below- The only cooler available for kitchen use was full of food which may prevent air circulation and affect cooler's ability to maintain 41 F or below// 3-501.15 Cease wrapping or covering food until cooled- Gravy for use tomorrow wrapped in plastic wrap- COS plastic wrap removed.
5-501.113 Keep dumpster closed- Side dumpster door open at time of inspection.
6-501.16 Store mops so that they may be air-dried without contaminating walls, equipment, or supplies- Hang mops to dry after each use.

Discussed new online food safety training with kitchen manager. Actually left establishment at 10:32 due to computer malfunction.
