1/6/2012Standard2CHEMICAL- Spray bottle with pink fluid was not labeled. Other spray bottles were labeled kitchen only. Label all toxic chemicals with the common name to prevent confusion or misuse. Reportedly these will be labeled.
DATE MARKING- Turkey removed from freezer had a date mark of 12/23. Opened or prepared ready-to-eat potentially hazardous foods shall be date marked when removed from the freezer to indicate the seven day consume by date. PIC will discuss with staff this requirement.
One accurate long stem thermometer available for use.
Pasteurized whole shell eggs are used for scrambled and fried eggs.
Observed employees using single-use gloves.
  • 6.4- Clean the floor under equipment more thoroughly it has debris build-up.
8/8/2011Standard 1DATE MARKING- Turkey had a date mark of 7/29. Sliced ham was not date marked. Ready-to-eat potentially hazardous foods shall be date marked when opened and consumed within seven days. These foods were discarded.
THAWING- Beef on counter thawing with an internal temperature of 46°F. Reportedly beef was thawed in the basement cooler and brought up to the kitchen earlier in the morning. Potentially hazardous foods shall be thawed under refrigeration and may not reach above 41°F during the thawing process.
HOLDING/PREPARATION- Ham sliced earlier in the morning prior to breakfast was sitting on the counter with an internal temperature of 53°F. Discussed placing ham back in cooler until breakfast is finished when employee is able to return to preparation. Potentially hazardous foods shall be held cold at 41°F and below. The ham was placed in the freezer.

  • 6.4- The floor under the walk-in cooler shelving is dirty. Clean this.
  • C2.3/4.5- Can opener blade had a piece of hair stuck on it. Clean and sanitize can opener blade and food employees hair must be effectively restrained.
  • 4.4- Bottom gasket on upright cooler/freezer is torn. Equipment shall be in good repair.
1/10/2011Standard2DATE MARKING- Cut tomatoes, roast beef, and cooked sausage were not date marked. Deli turkey meat dated 12/5.
Ready-to-eat potentially hazardous foods shall be date marked when opened and consumed within seven days.
Reportedly these foods will be date marked or discarded.
PROTECTION FROM CONTAMINATION- Can of Hunts tomato sauce was deeply dented on the side. Do not use canned goods that are deeply dented, bulging, and/or rusted. Can was relocated to the damaged can area.

  • 4.4- Quaternary ammonium chloride residual at 400-500 ppm. Maintain sanitizer at 200 ppm to avoid leaving a toxic residue on food contact surfaces.
  • 4.5- Gaskets on two door reach-in cooler are dirty. Clean this.
  • 6.4- Floor and wall juncture and wall under the dish machine are dirty. Clean this.
7/30/2010Standard 1DATE MARKING- Sliced turkey has a date mark of 7/19. Reportedly turkey was pulled from the freezer yesterday. Readyto- eat potentially hazardous foods shall be date marked when opened or prepared and when removed from the freezer to determine the consume by date of seven days. Turkey was dated 7/29 during this inspection.

Pasteurized whole raw shell eggs available for use.
Discussed thawing fish in running draining water. Fish was thawing in stagnant water in the food preparation sink and had an exterior temperature of 37°F.
