8/8/2011 | Standard 1 | DATE MARKING- Turkey had a date mark of 7/29. Sliced ham was not date marked. Ready-to-eat potentially hazardous foods shall be date marked when opened and consumed within seven days. These foods were discarded. THAWING- Beef on counter thawing with an internal temperature of 46°F. Reportedly beef was thawed in the basement cooler and brought up to the kitchen earlier in the morning. Potentially hazardous foods shall be thawed under refrigeration and may not reach above 41°F during the thawing process. HOLDING/PREPARATION- Ham sliced earlier in the morning prior to breakfast was sitting on the counter with an internal temperature of 53°F. Discussed placing ham back in cooler until breakfast is finished when employee is able to return to preparation. Potentially hazardous foods shall be held cold at 41°F and below. The ham was placed in the freezer. Digital thermometer available for use. Raw beef thawing on bottom shelf of walk-in cooler. Employees using covered beverages. |

Ready-to-eat potentially hazardous foods shall be date marked when opened and consumed within seven days. Reportedly these foods will be date marked or discarded. PROTECTION FROM CONTAMINATION- Can of Hunts tomato sauce was deeply dented on the side. Do not use canned goods that are deeply dented, bulging, and/or rusted. Can was relocated to the damaged can area. Accurate digital long stem thermometer available for use. Raw animal foods stored separate from ready-to-eat in the walk-in cooler. Pasteurized shell eggs used for all egg menu items except hard boiled eggs. |

Discussed thawing fish in running draining water. Fish was thawing in stagnant water in the food preparation sink and had an exterior temperature of 37°F. |
