11/05/2014 | Inspection | Food temperatures measured: meat loaf in hot box = 169 F, tuna wrap = 46 F, deli ham in walk-in = 38 F. Reviewed Time as a Public Health Control logs. The wash cycle temperature on the mechanical dishwasher was barely reaching the manufacturers specified temperature of 150 F. This was also a comment on the last inspection. Please have this dishwasher looked at and adjusted so that it easily meets the 150 F wash requirement. |

02/03/2014 | Inspection | The wash temperature gauge on the mechanical dishwasher read 142 deg. F during the wash cycle. The manufacturers specifications state that the wash cycle temperature is 150 deg. F. The rinse cycle temperature gauge read 190 deg. F during the rinse cycle. Please have the wash cycle temp. gauge looked at to make sure that it is accurate. Reviewed TPHC logs. Temperatures measured: hamburgers = 155.3 F, milk = 40.3. Discussed proper cooling methods and time/temperature parameters. |
