Temperatures measured: milk = 40.5 F, sausage pizza = 160 F, chicken patties = 179 F (both hot items were in the kitchen cooking/hot holding oven, milk was in the self-service refrigerator; TPHC is not used for milk). It was recommended that you place a refrigerator thermometer inside the milk refrigeration unit. Discussed cooling of potentially hazardous foods (cooling is only occasionally done at this school). Discussed procedures for making potato salad. Reviewed food receiving log (food from high school). Per interview, the ice machine is thoroughly cleaned and sanitized once a month. |
