Discussed wash-rinse and sanitizing dishes in 3 bay sink and observed test strips. Facility cooked eggs for breakfast sandwiches this morning. Facility fried eggs on stove in home economic room (not permitted by CCHD) and hot held in oven until served. Discussed facility purchasing a stove for permitted kitchen. Discussed cooking temperatures and hot holding temperatures. Observed mac-n-cheese being hot held in warmer box at 170dF. |
