06/11/2014Inspection6A/6E) Half of buffet steam table not maintaining foods above 140 F: hot and sour soup (APX 1/2 gal) at 132 F, chicken skewers (APX 3 lbs) at 80 F-102 F, sweet and sour chicken (APX 2lbs) at 92-107 F, assorted dumplings (APX 2 dozen) at 94-99 F. Operator stated that water in the table was changed 1/2 hour prior and unit was in process of heating up and all foods in table were in unit less than 2 hrs. Corrected- All foods noted above voluntarily discarded, steam table adjusted and functioning properly by end of inspection. 5A/5E) Approximately 3lbs of cooked shrimp on cold buffet at 65 F. Ice in table not in contact with food plates. Operator states shrimp was placed in table less than 2 hours prior. Corrected- operator voluntarily discarded shrimp and new shrimp placed in table with direct ice contact. 5C) Approximatley 2lbs of cooked noodles and 2 flats of raw shell eggs on under counter shelf along cook line at 1:45pm at 57 F and 63 F resectively. Operator states foods out less than 2 hrs. Corrected- Foods moved to walk-in cooler. 4A) Bulk container of hand soap and dish detergent stored on shelving over bulk containers of flour, sugar etc, with lids ajar. Corrected-chemicals relocated. No contamination observed. 5A) Approximatley 20 different plates of sushi with 6- 12 pieces each on buffet cold table at 1:45 pm around 60 F. Operator states sushi items sit in table no longer than 45 minutes and are discarded. Sushi prepared using rice at 102 F and fish at less than 45 F. Corrected- all sushi present at start of inspection either consumed or discarded by staff. 5C) Approximatley 40 covered plates of sushi (2-3 pieces each) on conveyer belt not under temperature control at approximately 70 F at 1:45pm. Operator states sushi is on belt no longer than 1 hour based on computer monitoring system. Corrected- all sushi consumed or discarded during inspection.

03/27/2014InspectionRaw eggs (in flats) stored over box of vegetables. Vegetables were moved to shelf with other vegetables. Raw shrimp stored over container of raw vegetables that will not be cooked before service. These shrimp were moved to self ender eggs. All shrimp will be cooked. Gauge to measure water temperature does not work on dishwasher. Technician has been called.
