02/24/2015 | Inspection | Food temps. were obtained at the front counter sandwich reach-in refrigerator under Turbo-chef oven--Bacon sandwich at 30.7 deg. F and sausage sandwich at 45 deg. F. Education was provided about proper hot and cold holding temps for potentially hazardous foods, and NYSDOH educational literature provided. Creamers and milk was observed to be 42-43 deg. F. Low-temp. dishwasher was observed to be 50 ppm chorine after a wash, rinse and sanitize cycle of 4 minutes at a high temp. of 129 deg. F. during the minute-long sanitize cycle. Operator was advised that this allows for proper sanitization (as per NYS Sanitary Code Subpart 14.1-112 (a) (2) ), and to ensure that items washed in the dishwasher are immersed for at least a minute in a solution with available chlorine of at least 50 ppm or more at a temperature of 75 deg. F. or more so as to always meet code for proper sanitization. |
