Then food stored in cold holding unit on site until service at noon. Today menu consisted of salad (with sliced turkey and cheese), chips, and milk. Observed temp logs, coolers with ice, and probe thermometer. Advised facility to cold hold items in permitted kitchen cold holding unit. Tested chlorine residual in mechanical room, 0.4mg/L. |

Temperature of milk was 45 degrees F. Discussed with operator checking the temperature as the lunches are stored in a home-style refrigerator and there is not a lot of room for good air circulation. Operator will make sure there is a thermometer in the refrigerator that is checked occasionally. |
