09/09/2015 | Inspection | Discussed the deficiency with the operator. Sliced Tomatoes on the Prep Line were found to be at 56 degrees F, but the operator said that they have a waiver. There was a typewritten sheet that stated that tomatoes could be held for 12 hours. The following temperatures were measured (degrees F): Prep Line - Diced Tomatoes - 42.7; Walk-In Cooler - Sliced American Cheese - 41.4; Hamburger Cooking On Grill - 179.2; Hot Holding - Breaded Chicken Pattie - 198.8, Grilled Chicken Breast - 162.4; Chili - 146.7. The Fire Suppression System was Inspected in September 2015. Report e-mailed. |
