Repair the dishwasher to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the dishwasher, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. Until the dishwasher can be repaired, use the 3-compartment sink to effectively sanitize all cleaned utensils.

Spoke to the person in charge about cooling procedures and facility policy for ill employees. Sliced tomatoes are now considered potentially hazardous food items and will require temperature control. Sliced tomatoes not held at the correct temperature will be cited as a violation.

Repair the garbage disposal and the victory refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the garbage disposal and victory refrigerator, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. Victory refrigerator shall not be used for storage of potentially hazardous food until the unit is adequately repaired. Cafeteria was observed using single use items for serving purposes, until the garbage disposal can be repaired. All other utensils shall be washed, rinsed, sanitized in the 3-compartment sink until the warewasher can again be used.

Violation: 0820 - Corrected During InspectionCritical Coleslaw cold holding at 53F. Tater tots hot-holding at 134F. Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F (45F) or below. Coleslaw discarded during the inspection. Recommend that the ice level in cold holding unit be raised minimally to the upper level of the food. Tater tots reheated in the oven to 165F. Adjust or repair hot holding unit to maintain >140F. Until unit can be repaired/replaced use the over to maintain potentially hazardous foods at >140F. Notify the Health Department when the unit has been replace/repaired.

Comments:
Asked the person in charge to call me when the garbage disposal had been corrected. Single use plates, utensils are being used to avoid the area around the failing garbage disposal, since that is where the warewasher is located. Utensils used for food preparation are being washed rinsed and sanitized in a 3 compartment sink.

Repair the door opening to provide a tight seal. Correct in 30 days.
