- 0470 - Corrected During Inspection Critical Raw ground beef stored over ready-to-eat (RTE) apples in the refrigeration unit.
Separate raw foods of animal origin during storage, preparation, holding, and display from raw RTE food including foods such as fish for sushi or molluscan shellfish, or other raw RTE food such as vegetables, and cooked RTE food. - 0610 - Corrected During Inspection Apples in a box stored on the floor or food stored less than 6" above the floor.
Elevate food storage onto approved shelving with minimum 6" legs or casters.

Violation: 1570 - Dishwasher was observed in a state of disrepair and damaged.
Repair the dishwasher to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the dishwasher, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. Until the dishwasher can be repaired, use the 3-compartment sink to effectively sanitize all cleaned utensils.

Comments:Spoke to the person in charge about cooling procedures and facility policy for ill employees. Sliced tomatoes are now considered potentially hazardous food items and will require temperature control. Sliced tomatoes not held at the correct temperature will be cited as a violation.

Violation: 1570 - Victory refrigeration unit was observed to not be holding correct temperature. Garbage disposal was disconnected preventing use of the warewasher in the warewasher room.
Repair the garbage disposal and the victory refrigerator to restore a state of condition that allows for proper operation, accuracy, functioning, maintenance, and cleanability per Part IV, Article 1 and 2 of this chapter. If unable to repair the garbage disposal and victory refrigerator, replace it with one that meets the specifications of Part IV, Article 1 and 2 of this chapter. Victory refrigerator shall not be used for storage of potentially hazardous food until the unit is adequately repaired. Cafeteria was observed using single use items for serving purposes, until the garbage disposal can be repaired. All other utensils shall be washed, rinsed, sanitized in the 3-compartment sink until the warewasher can again be used.
Comments:
Please call when the garbage disposal and victory refrigerator have been repaired.

Violation: 0820 - Corrected During Inspection Critical Coleslaw cold holding at 53F. Tater tots hot-holding at 134F.
Relocate food to a refrigeration unit that is capable of maintaining food storage at 41F (45F) or below. Coleslaw discarded during the inspection. Recommend that the ice level in cold holding unit be raised minimally to the upper level of the food. Tater tots reheated in the oven to 165F. Adjust or repair hot holding unit to maintain >140F. Until unit can be repaired/replaced use the over to maintain potentially hazardous foods at >140F. Notify the Health Department when the unit has been replace/repaired.

Comments:Was notified by phone that the garbage disposal was repaired one day after observing non-functioning garbage disposal.

- 2350 ii - The garbage disposal is slow to drain or clogged and inoperative.
Plumbing systems and components shall be maintained in good repair. - 0610 - Box of apples and strawberries was observed being stored on the floor in the walkin refrigerator.
Protect food from contamination by storing the food in a clean and dry location.
Asked the person in charge to call me when the garbage disposal had been corrected. Single use plates, utensils are being used to avoid the area around the failing garbage disposal, since that is where the warewasher is located. Utensils used for food preparation are being washed rinsed and sanitized in a 3 compartment sink.

- 2930 - Outer opening of the food establishment is not protected against entry of insects and rodents. Bottom of rear door has a space between the door and the jamb. This could allow entry of mice or insects.
Protect the food establishment against the entry of insects and rodents by 1. Filling or closing holes and other gaps along floors, walls, and ceilings, 2. Closed, tight fitting windows, and 3. Solid, self-closing, tight-fitting doors. Insects and rodents are vectors of disease-causing microorganisms which may be transmitted to humans by contamination of food and food-contact surfaces. Repair the door opening to provide a tight seal. Correct in 30 days. - 0510 - Fruits not washed before being offered for sale or service. Fresh apples are being dispensed on the service line from and open bowl.
Thoroughly wash raw fruits and vegetables to remove soil and other contaminants before cutting, combining with other ingredients, cooking, serving, or being offered for human consumption in the ready-to-eat form. Place apples in a protected container with a dispensing utensil or have a staff member dispense the apples. Correct in 24 hours
