    Observation: The door of the refuse container located outside the establishment is missing.
    Correction: Receptacles and waste handling units for refuse, recyclables, and returnables used with materials containing food residue and used outside the food establishment shall be designed and constructed to have tight fitting lids, doors, or covers.
  • Ventilation Systems, Shall Be Clean
    Observation: Intake and exhaust air ducts are not being cleaned at a frequency necessary to prevent contamination by dust, dirt, and other materials.
    Correction: Clean intake and exhaust air ducts at regularly intervals to prevent them from becoming sources of contamination.

The purpose of today’s visit was to conduct a routine inspection. Manager was busy and could not follow EHS but was available for questions. No critical violations were observed during today's visit. Employee health policy in place. Pest control inspection system in place. Facility appeared neat, clean and orderly during today's visit. Observed two employees wash hands properly. Thank you.
IMPORTANT:
Per discussion with manager, the current water filtration system is to be replaced with a new water filtration system. Prior to installation, provide a Specification Sheet on the new water filtration system to the Plan Review office at the health department, which shows approved backflow prevention. You may contact Plan Review by calling 703-246-2510. Any changes in equipment or structure must be approved by the Health Department prior to installation. Thank you. *Water Heater: State water heater above mop sink (not able to see model and BTU)
*Dish Machine: Hobart LXi high heat sanitizer: Thermolabel activated on first run, Sanitize basin and wiping cloth buckets observed with acceptable levels of sanitizer

Observed facility clean and organized.
  • Certified Food Manager/Certificate Process
    Observation: The person in charge (PIC) has a valid certificate of successful completion of a Certified Food Manager (CFM) exam but does not possess the CFM card issued by ORS Interactive, Inc.
    Correction: Food managers who possess a valid certificate of passing a food safety exam shall obtain the photo identification card from ORS Interactive, Inc. (see handout provided) within 10 business days. A copy of the photo identification card can be faxed to the food safety section at (703) 385-9568. Failure to provide a copy of the photo identification card will result in further enforcement action.
