Received a complaint stating that men's room water is not working. At time of visit water is working fine (electric eye). Sink is part of
electrical system (not battery). Sometimes customers have problems with the electric eye, even after being shown how it works. To managers
knowledge, sink has been working fine all day.
**CDC Risk Factor Violation 22 A**: WFC 3-501.19 Time is not being properly used as a public health control. If time only, rather than time
in conjunction with temperature, is used as the public health control for a working supply of potentially hazardous food before cooking, or for
ready-to-eat potentially hazardous food that is displayed or held for service for immediate consumption:
• Par cooked chicken fingers kept at room temperature not properly marked with time (using time as a control). Corrected at time of
inspection.
(1) The food shall be marked or otherwise identified to indicate the time that is 4 hours past the point in time when the food is removed from
temperature control,
(2) The food shall be cooked and served, served if ready-to-eat, or discarded, within 4 hours from the point in time when the food is removed
from temperature control,
(3) The food in unmarked containers or packages or marked to exceed a 4 hour limit shall be discarded, and
(4) Approved written procedures shall be maintained in the food establishment and made available to the regulatory authority upon request.
Three-compartment sink - Kay chlorine sink sanitizer - 100ppm + two seperate knee-operated handwash sinks + mop / utility sink. Sanitizer in
bucket - 100ppm chlorine. Test strips available

* One handwash sink is out of order due to broken atuomatic paper towel dispenser. Although the other handwash sink is working properly, this
one should also be repaired or a roll of paper towels kept at sink for use.
The chicken fries were being held at 77 f. There was not a time on the container that stated when the chicken fries were prepared so
it was unknown how long they were out. The manager disposed of them. In addition, the premade sandwiches did not have the time on them. The
manager spoke to the grill line employee.

Three compartment sink, mop sink, and employee hand wash sink. Kay San is used. The wiping cloth buckets and sink were 100 ppm. Test strips
available.
