Violation 37 I: 3-306.11 Food Display.
• Deserts served by beverage stations should have some sort of sneeze guard, also fruits on salad bar.
Except for nuts in the shell and whole, raw fruits and vegetables that are intended for hulling,
peeling, or washing by the CONSUMER before consumption, FOOD on display shall be protected from contamination by the use of PACKAGING; counter,
service line, or salad bar FOOD guards; display cases; or other effective means.
Violation 53 F: 6-201.11 Floors, Walls, and Ceilings.
• Peeling paint noted throughout (including walk-ins)
• Floor drains in ill repair
Except as specified under § 6-201.14, the floors, floor coverings, walls, wall coverings, and

Violation 39 A: 3-304.14 Wiping Cloths and Working Containers, Use Limitation.
The wiping clothes used for the cleaning of food contact surfaces did not contain sanitizer.
(A) Cloths that are in use for wiping FOOD spills shall be used for no other purpose.
(B) Cloths used for wiping FOOD spills shall be:
(1) Dry and used for wiping FOOD spills from TABLEWARE and carry-out containers; or
(2) Wet and cleaned as specified under ¶ 4-802.11(D), stored in a chemical SANITIZER
at a concentration specified in § 4-501.114, and used for wiping spills from FOOD-CONTACT
and nonFOOD-CONTACT SURFACES of EQUIPMENT.
(C) Dry or wet cloths that are used with raw animal FOODS shall be kept separate from
cloths used for other purposes, and wet cloths used with raw animal FOODS shall be kept in
a separate SANITIZING solution.
(D) Wet wiping cloths used with a freshly made SANITIZING solution and dry wiping cloths
shall be free of FOOD debris and visible soil.
(E) Working containers of SANITIZING solutions for storage of in-use wiping cloths may be
placed above the floor if used in a manner to prevent contamination of FOOD, EQUIPMENT,
UTENSILS, LINENS, SINGLE-SERVICE or SINGLE-USE ARTICLES.

The PHYSICAL FACILITIES shall be maintained in good repair.

Single service food prep sink and barrier is used between food and sink. Employee hand wash sink will be installed next to this sink and foot
pedals will be used.
Dish area: There is a 2 and 3 compartment sink that is used for dishwashing and pot washing. Hobart dish machine without diverter valve and
faucet: 160 f on plate. If a diverter valve, faucet, and soap is installed on the overhead spray hose this can be used an employee hand wash
sink. Oasis 146 quat sanitizer used. Test strips available.
The bakery area has an employee hand wash sink.
The following temperatures were taken:
Silver King reach in cooler: 36 f walk in cooler: 37 f walk in freezer: 4 f
Some of the walk in coolers are shut down at this time since the floors are being redone.
