Observation: 1% milk in the beverage/dessert cooler was 44°F. The cooler ambient temperature was 48°F. All milk was moved to another cooler during the inspection. Discussed that the unit shall maintain potentially hazardous food at or below 41°F before milk is placed back into cooler.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Replace or adjust thermometer in beverage/dessert cooler so that it is accurate to +/- 3°F.

Sliced tomatoes and corn salsa were stored in the prep cooler overnight. Employee moved all potentially hazardous food from the sandwich prep cooler to the walk-in cooler (37°F). Management adjusted the cooler temperature gauge.
