- Critical: PHF/TCS, COLD HOLDING
Observation: The following temperatures were recorded in the 6-drawer cooler (52°F ambient): beef-49°F, spaghetti-47°F. Raw vegetables (non-TCS) were 48°F. All potentially hazardous food was moved to the walk-in cooler during the inspection. A repair person was called. Management determined that the cooler was not plugged in. Discussed that cooler shall be able to maintain potentially hazardous food at or below 41°F before potentially hazardous food is placed back into the cooler.

The following temperatures were recorded in the glass 4-door cooler (45°F ambient): sliced tomatoes-48°F, mini dessert cup-44°F, ziti-44°F. Cooler repair person adjusted the cooler during the inspection. Discussed that plastic trays may be blocking air flow.

Roasted garlic left out on the counter was 69°F. Employee stated that the garlic was cooked at 9:00am. Employee voluntarily discarded the garlic during the inspection. Discussed that roasted garlic is considered potentially hazardous, and it shall be kept at 41°F or below.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Correct By: 29-Mar-2016

Observation: Reduced oxygen packaging used for heat sealed soup and sauces does not have a HACCP plan on-site.
Correction: Stop using reduced oxygen packaging until an approved HACCP plan is in place or change procedures to follow the existing approved HACCP plan.
- PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR
Observation: The mop sink is clogged.
Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing.

- CONTROLLING PESTS - HARBORAGE CONDITIONS
Observation: Back door leading to the outside has a gap between the bottom of the door and threshold. Observed evidence of fruit flies in the bar area.
Correction: Repair weather-stripping on doors leading to the outside. Clean floor drains and soda guns and holsters in bar area to minimize harborage for pests. Eliminate fruit flies.

- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: Observed missing grout on grill line walk way and near dish machine. Grout shall be repaired so that floor is considered easily cleanable.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.
