Critical: PHF/TCS, COLD HOLDING (repeated violation) Observation: Cut melon in the deli area ice bath was 44°F at the beginning of the inspection and 46°F at the end of the inspection. Discussed adding water to ice bath to bring ice up to the product level. Ham in the grill prep cooler (upper) was 45°F. Ham was discarded during the inspection. Discussed monitoring grill cooler and items in the upper and lower portions to determine why deviation occurred.
