Observation: The following temperatures were taken at the omelet station (each item in metal cooling container): Liquid eggs-56°F, Ham-57°F, Sausage-56°F, Shell eggs (ambient)-62°F. All potenetially hazardous food at the omelet station was voluntarily discarded. Discussed placing potentially hazardous food at the omelet station on ice. The following temperatures were taken in the Coca Cola Cooler (ambient 51°F): Egg whites-48°F, 51°F. All potentially hazardous food in the Coca Cola Cooler was voluntarily discarded. Cooler shall be serviced or adjusted. The following temperatures were taken at the buffet ice station: Cream cheese-53°F, Cut melon-48°F, 53°F. Potentially hazardous food on the buffet line will be discarded at the end of breakfast service (about 10:00am). Discussed using time as a temperature control for buffet items or bringing the level of the ice up to the product level.
