HANDWASHING SINKS, INSTALLATION - WATER TEMPERATURE (corrected on site) Observation: Hot water temperature at handwashing sinks was below 85 degrees F. Both hand sinks were adjusted to between 90 and 110 degrees F during the inspection.
Correction: Water temperature at a handwashing sink shall be at least 85°F and no more than 110°F.
CLEANING, FREQUENCY AND RESTRICTIONS Observation: Bar floor drains and bar floor under equipment noted in need of cleaning.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.

Critical: PHF/TCS, COLD HOLDING (corrected on site) Observation: Salad mix in the Silver King Prep Cooler (40F ambient) was cold held at 47F. Salad mix was immediately moved to the produce walk-in cooler. Several other items in the Silver King Prep Cooler were also above 41F (Ex: cut tomatoes-42F, spinach dip-43F). The cooler may not be maintaining temperature due to excessive opening of drawers during busy hours.
Correction: Adjust the Silver King Cooler so that it can maintain potentially hazardous food at or below 41F.
FOOD CONTACT SURFACES - SOILED Observation: The following noted in need of cleaning:
-Inside of ice machine
-Wait staff soda machine drainage areas including air-gap drain and nozzles
-Bar floor drains
Correction: Maintain food and non-food contact surfaces in a clean condition.
FOOD CONTAMINATION - FOOD STORAGE PROHIBITED AREAS Observation: Ice scoop stored in the utility area is subject to contamination by chemical lines.
Correction: Remove food items from this area to an area not subject to contamination.
