Critical: PREVENTING CONTAMINATION FROM HANDS - NO BARE HAND CONTACT WITH RTE-FOODS (corrected on site) Observation: Employee observed handling ready-to-eat food with bare hands in the grill area.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods. This was discussed and corrected at inspection.
Critical: PHF/TCS, COLD HOLDING Observation: Vanilla mix in the custard maker was at 45 degrees, chocolate at 42 degrees. Front top cooler adjacent to the grill was 53 degrees and the back top cooler was at 62.
Correction: Maintain cold potentially hazardous foods at or below 41°F. All of these refrigeration units are turned off at night and cleaned & sanitized. Opening employees are to turn the units on daily - this was not done this morning and these units were not turned on. They were turned on as soon as this omissoin was noted and temperatures were coming down as we left.
Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site) Observation: Dishwasher was not dispensing a measureable amount of chlorine for sanitizing.
Correction: Clean and sanitize all utensils and equipment before contact with food. At check it appeared as if the sanitizer container had just been changed. Washer was primed and following cycles were properly sanitizing.
TOXIC SUBSTANCES - IDENTIFYING INFORMATION, PROMINENCE - COMMON NAME-WORKING CONTAINER Observation: Several spray bottles of cleaners / sanitizers not labeled with contents.
Correction: Label working containers.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: There is duct tape on the ice cream freezer at the drive thru.
Correction: Repair equipment to good condition or remove from premise - remove duct tape which is not an approved kitchen repair material.
NON-FOOD CONTACT SURFACES - CLEANING FREQUENCY Observation: There is a build up of residue on the non food contact areas of the chocolate & caramel dispensers.
Correction: Clean all equipment on a routine basis to prevent accumulation of soil residues.

LABELING - FOOD STORAGE CONTAINERS LABELED WITH COMMON NAME Observation: Container of sugar (?) in the service area cabinet is stored in unlabeled container.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.
EQUIPMENT AND UTENSILS - GOOD REPAIR Observation: Microwaves have missing interior paing / interior rust.
Correction: Replace microwaves that have interior rust / missing paint.
PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR Observation: There is duct tape holding the eye wash station together.
Correction: Duct tape is not an approved food service repair material - repair or replace defective or leaking plumbing.
DESIGNATED AREAS - EMPLOYEE ACCOMODATIONS - EATING/DRINKING/SMOKING Observation: Employee drinks are stored on a shelf in the walk in where they can contaminate foods.
Correction: Ensure employee foods / drinks are stored so that they cannot contaminate food, equipment, linens, single-use and single service articles.
