Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Discard ready-to-eat foods that show evidence of contamination.

Observation: Foods i.e. vegetables and meats in the prep coolers and the walk-in cooler were observed to be unwrapped or uncovered.
Correction: All foods that are not part of a cooling process shall be covered at all times to prevent cross-contamination. If cross-contamination is evident, discard suspected foods.

Observation: Cooking wine is stored in unlabeled container.
Correction: Store all foods that are removed from their original packages in containers labeled with the common name of the food or ingredient.

Observation: Meats and prepared foods are subject to potential contamination by the use of nonfood grade containers for storage.
Correction: Change methods or procedures to protect foods from contamination.

Observation: Non-food contact surfaces of storage shelves are soiled.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

Observation: Bulk food containers contacting PHF/TCS food are improperly cleaned. Interior and exterior of containers are soiled.
Correction: Clean utensil and equipment not contacting PHS/TSC food any time contamination occurs, at least every 24 hours, or at a frequency according to manufacturer specifications.
- PLUMBING - SYSTEM MAINTAINED IN GOOD REPAIR
Observation: The faucet fixture at the hand wash sink in the restroom is lose and movable when used and not maintained in good repair.
Correction: The plumbing system shall be maintained in good repair. Repair or replace defective or leaking plumbing.

Observation: The exterior door in the back area is not self-closing or tight-fitting.
Correction: Make the door self-closing and tight fitting to prevent the entrance of insects or rodents.

Observation: The door handle of the door to the restroom is missing.
Correction: Replace missing door handle.
