Critical: FOOD CONTACT SURFACES - WAREWASHING CHEMICAL SANITIZATION EXPOSURE TIME (repeated violation) Observation: Dishwashing machine is not dispersing chlorine sanitizer. Cannot open/serve food to public until machine is repaired.
Correction: Adjust warewashing operation procedures or equipment to assure utensils are exposed to the chemical sanitizer solution for the required time period.
Critical: PLUMBING - BACKFLOW PREVENTION - AIR GAP (repeated violation) Observation: No air gap provided on food prep sink in kitchen.
Correction: Provide an air gap on water supply side to protect water supply.
HAND DRYING PROVISION (repeated violation) Observation: No single-use toweling or other hand drying device available at handwashing sink for hand drying in upstairs bar.
