NON-FOOD CONTACT SURFACES - CLEAN Observation: The underside of the tabletop mixer is soiled with food debris.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.
INSECTS AND RODENTS - OUTER OPENINGS PROTECTED Observation: There are gaps around the door frame of the exterior basement door which could allow for the entrance of insects or rodents.
Correction: Repair this hole or gap so that entrance by insects or rodents into the food establishment is prevented.

Critical: RTE/PHF-TCS PROPER DATE MARKING (repeated violation) Observation: Some items are date marked, but others are date marked on the main batch in the walk-in cooler but not on the smaller portion in the prep cooler.
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Date all containers with the date the food was opened or prepared.
CONSUMER ADVISORY Observation: No consumer advisory provided on the menus. They were recently updated and this version does not have an advisory or asterisks next to the items that may be offered undercooked.

THERMOMETERS - AMBIENT AIR AND WATER - ACCURACY Observation: Thermometer in kitchen prep cooler measuring ambient air is not accurate, it is reading 50 F but mine is reading 42 F. Milk cooler is also missing a thermometer today.
Correction: Calibrate or replace thermometer.
POSTING OF CERTIFICATE Observation: There is no food manager’s certification posted in the food establishment.
Correction: Provide & post state food manager certification.
FOOD CONTAMINATION PREVENTED FROM PREMISE - OFF THE FLOOR Observation: Containers of foods stored under shelves on floor in walk-in cooler. There are also pots stored on the floor by the mixer in the back room.
