    Observation: Sliced ham opened 9/14 in the Perlick 4 door reach-in cooler is not datemarked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days. Ham was datemarked during the inspection and datemarking was discussed. Correct By: 17-Sep-2015
  • Critical: SEWAGE - BACKFLOW PREVENTION (repeated violation)
    Observation: A direct connection exists between the sewage system and a drain from the ice bin behind the bar. It appears that the zip tie used to hold up the ice machine drain hose has fallen and needs to be adjusted to create an air gap.
    Correction: Design the sewage system in a manner that would preclude a direct connection between the sewage system and the drain from which food is placed. Remove the direct connection by adding an air gap between the drain from the ice bin and the sewage system. Correct By: 01-Oct-2015

    Observation: ProForce quaternary ammonia sanitzer in the spray bottle is in excess of 500 ppm and is too strong.
    Correction: Change procedures and provide training to employees on proper use of toxic chemical following manufacturer's directions for use. Operator diluted the sanitizer concentration during the inspection. Correct By: 17-Sep-2015

    Observation: Handle of the ice scoop is touching the ice in the ice machine.
    Correction: Store in-use utensils in the food item with handle extended, on a clean surface, running dipper well or in a container of water greater than 135°F. Do not allow the handle of the ice scoop to fall into the ice in the ice machine.

    Observation: Gaskets of the 2 coolers in the back room near dry storage (holding pizza crusts and eggs) are broken and in need of repair.

    Observation: White plastic ice scoop in ice machine is cracked by the handle and is no longer cleanable.
    Correction: Replace ice scoop with a utensil that is smooth, durable and easily cleanable. Correct By: 09-Jun-2014

    Observation: Beverage gun drain and inside of ice machine not contacting PHF/TCS food are improperly cleaned. Biofilm and residues are visible.
    Correction: Clean utensil and equipment not contacting PHS/TSC food any time contamination occurs, at least every 24 hours, or at a frequency according to manufacturer specifications. Correct By: 20-May-2014
