Observation: Sausage in plastic container on counter was 62.6F. Food was brought from cooler approx. 1 hour prior and left on counter for use. Normal procedures are ice bath.
Pancake mix in large 5 gallon stainless steel container was 61F. Pancake mix is made with milk. On busy times, facility goes through large portion within 20-30 minutes. However, during slow periods pancake mix must remain 41F or below.
Ranch dressing and sour cream in Norlake reach-in cooler were 50F and 44F. Ambient temperature of cooler was 52F. All other foods in cooler were non-PHF.
Correction: Maintain cold potentially hazardous foods at or below 41°F. Manager immediately put on shallow pan and placed in walk-in cooler to rapidly chill.
Facility will use within 30 minutes. Discussed using time as a control for pancake mix. Have procedures available for review by inspector. Correct By: 26-May-2015

Observation: Ice scoop handle was stored in direct contact with ice.

Observation: Wiping cloth bucket measured 0ppm chlorine solution. Facility mixes with soap.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution of 50-100ppm bleach and water or other approved sanitizer. Correct By: 26-May-2015

Observation: Clean containers used to store clean dishes are stored on lower shelf directly next to handsink
Correction: contamination possible from dirty splash water.

Observation: Food items were stored on floor in walk-in freezer.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor. Correct By: 26-May-2015

Observation: The back exterior door is not tight-fitting
Correction: gaps present on bottom portion between doors allowing for the entrance of pest/rodents. Another solid door is used in winter months.

Observation: No handwashing signage provided at handwashing sink in bakery and in wait station.
Correction: Provide handwashing signage at all handwashing sinks used by food employees. Provided during inspection. Correct By: 26-May-2015
