- Critical: FOOD CONTACT SURFACES - SANITIZED BEFORE USE AFTER CLEANING (corrected on site)
Observation: Containers were not being sanitized after cleaning. Facility was not using sanitizing step, just washing with soap and rinsing.
Correction: Clean and sanitize all utensils and equipment before contact with food. Set-up 3 compartment with chlorine solution and tested at 50ppm. Discussed with employees use of sanitizer as step after washing with soap. Be sure to immerse in sanitizer for 60 seconds and let air dry. Correct By: 23-Jun-2015
- FOOD TEMPERATURE MEASURING DEVICES - PROVIDED
Observation: No thermometer is present for monitoring temperatures in foods.
Correction: Provide thermometers that are easily accessible and capable of taking temperatures in food. Correct By: 24-Jun-2015
- WAREWASHING - SANITIZING SOLUTION - TESTING DEVICES
Observation: A chlorine test kit is not available for checking sanitizer concentrations.
Correction: Provide a test kit or other device for measuring the concentration of sanitizing solutions. Correct By: 24-Jun-2015
- USING A HANDWASHING SINK - ACCESSIBLE (corrected on site)
Observation: Cold water to handsink was turned off and hot water was scolding hot. Cold water line was leaking, which is why water line was turned off. Employees were unable to wash hands with this handsink. This is only handsink in facility.
Correction: Keep handwashing sink free of obstructions and in working condition at all times to allow for frequent handwashing. Temporary allowance was granted for facility to use prep sink for handwashing. No prep is done at this facility (no veggies, raw meats, etc). Part has been ordered for handsink cold water line. Contact me to verify. Correct By: 26-Jun-2015
- WIPING CLOTHS - USE LIMITATION - CLOTHS FOR WIPING COUNTERS STORED IN SANITIZER (corrected on site)
Observation: Wiping cloth bucket had 0ppm chlorine solution. Facility was using detergent in buckets.
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Re-mixed bucket to 100ppm chlorine solution. Correct By: 23-Jun-2015
- WAREWASHING - SINKS AND DRAINBOARDS - SELF-DRAINING
Observation: No drainboards are provided to air dry dishes at this facility. 3-compartment does not have attached drainboards and no supplemental drain boards are provided.
Correction: Provide self-draining drainboards for all warewashing sinks and machines. Correct By: 20-Jul-2015
