    Observation: Cooler door gaskets to the Bev-Air prep cooler are severely torn and have heavy food debris and mold build up.

    Observation: Employee observed buttering toast with bare hands. It was stated they are too busy for gloves. I recommend that they develop a plan and apply for a variance to comply with the no bare hand contact with ready to eat section of the food code.
    Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

    Observation: No food in cooling units was date marked.
    Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
