Observation: Cleaning chemical spray bottles observed stored near clean dish ware at various locations thoughout the bar. Chemical bottles relocated by staff.
Correction: Rearrange area so that toxic materials are stored below or away from food, equipment and single service items.

Observation: Boxes of canned goods observed stored on the floor under prep table in the kitchen.
Correction: Store all food items 6 inches above the floor.

Observation: Non-food contact surfaces of the deep fryer and surrounding equipment are soiled. The interior of the pizza ovens are soiled. The utensil caddy in the kitchen area is soiled.
Correction: Clean and remove dust, dirt, food residue, and other debris from all non-food contact surfaces of equipment.

Observation: Unable to locate a thermometer in the small glass door refrigerator or the walk-in cooler.
Correction: Equipment used for hot and cold holding shall be designed to include and shall be equipped with at least one integral or permanently affixed temperature measuring device.
- EQUIPMENT AND UTENSILS - GOOD REPAIR
Observation: The right handle on the True 2 door freezer is broken and repaired with duct tape.
Correction: Repair the handle so it is smooth and easily cleanable without sharp edges.
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
Observation: There are 2 boxes of plastic cups, a box of plastic cup lids and a package of cardboard pizza trays stored on the floor in the basement storage area.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor.
