    Correction: Maintain food contact surfaces in a clean condition.

    Observation: There is no Wisconsin Certified Food Manager for this establishment.
    Correction: Provide a Wisconsin Certified Food Manager and post the state certificate in the food establishment within 90 days or a fee of $150 may be charged. The course has been taken, but awaiting certificate.
  • EQUIPMENT AND UTENSILS - PROPER ADJUSTMENT
    Observation: The door seals on both doors of the True 2 door freezer are torn. The seal on the left door of the True 2 door cooler is torn.
    Correction: Repair or replace the seals so the doors are kept intact, tight, and properly adjusted.
