Observation: The shield in the ice machine is soiled. The small freezer in the bar has ice accumulated on the shelves with glasses stored with lip contact surface on the ice.
Correction: Maintain food contact surfaces in a clean condition.

Observation: There are wooden carts under the fryers.
Correction: Provide non-food contact surfaces that are constructed of a corrosion resistant, nonabsorbent, and smooth materials.
- UTENSILS, EQUIPMENT AND LINENS - STORING PROHIBITIONS - CLEAN DRY LOCATION
Observation: There are boxes of napkins and portion cups are stored on the floor in the basement.
Correction: Clean equipment and utensils, laundered linens, single-use and single service articles shall be stored in a clean dry location, not exposed to contamination and off the floor.
- SURFACE CHARACTERISTICS - INDOOR AREAS
Observation: The floor in the basement walk-in cooler is torn with pieces missing. The floor under the fryer is torn. The floor in front of the new 3 door beer cooler is not attached to the floor below and is causing a gap.
Correction: Repair area or replace with approved materials. Walls, floors and ceilings shall be smooth, durable and easily cleanable. If located in areas subject to moisture they shall also be non-absorbent.

Observation: There is a accumulation of grease on the floor to the left of the fryer.
Correction: Clean the physical facilities at a frequency necessary to keep them clean.

Observation: The lunch meats in the prep cooler and the cole slaw in the walk-in cooler are not date marked. There are 3 containers of sour cream in the walk-in cooler that have a sell by date of August 7, 2014
Correction: Adjust method or procedures so that all ready-to-eat potentially hazardous foods (time/temperature control for safety food), if required, are provided with date marking or an effective method of identifying when a food item has exceeded 7-days.
- Critical: PLUMBING - BACKFLOW PREVENTION - AIR GAP
Observation: The ice machine drain is below the rim of the sump crock.
Correction: Provide an air gap on water supply side to protect water supply. The end of the drain pipe must be at lease 1" above the rim of the sump crock.
