Correction: Reorganize storage so that ready-to-eat foods are stored above raw animal food and raw vegetables. Cooked food was place over raw food at inspection.

Observation: Wiping cloth used for wiping counters stored on counters
Correction: Cloths used for wiping counters shall be stored in a sanitizing solution. Solution was provided at inspection. Chlorine used at 100 ppm.

Observation: Employee observed handling bread with bare hands.
Correction: Employees shall use single-use gloves, utensils, bakery papers or other approved means when handling ready-to-eat foods.

Observation: Uncooked chicken stored over uncooked burger.
Correction: Store raw animal foods in order of descending hazard to prevent cross contamination. Separate raw animal food species from one another except when combined as ingredients.

Observation: The Person in Charge must review with all staff safe food and chemical handling.
Correction: The person in charge shall provide training to employees on walkin cooler storage and chemical labeling. Review drink container policy for staff having a beverage in the kitchen.
