Observation: Raw fish is stored under raw burger. Raw sausage is stored over precooked meat and vegetables to be cooked.
Correction: Store raw animal foods in order of descending hazard to prevent cross contamination. Store raw meat below and separate from other foods.

Observation: Warewashing machine thermometer is not working. Water temperature in well measured 125F.
Correction: Warewashing machine shall be equipped with a temperature measuring device that measures the temperature of water in the wash and rinse tank, the incoming water for hot water sanitizing or water in the chemical sanitizing tank. Repair or replace thermometer.
