Good morning all..Haven't posted here in a few days, haven't cooked the last 4 days! The ribs that I was going to cook yesterday are on tonights menu with baked potato and some kind of veggie. Have a great day!

Tonight - ta-da!!!! - pepper/egg subs. Deli is getting bread in today from NJ!!! Listen for the moans from the Midwest as I get my first bite.

If I am ever in NJ I have to try the pepper and egg sub. I read about it here and it has its own fan club! I am not sure I get the picture--what makes it more than a western or eastern sandwich?

Morning Elston-it's simple and delicious. I saute red pepper, onion in some olive oil. Beat up some eggs and pour over. Served on crusty Italian bread.

Do you put ketchup on it? Butter the bread? Salt and Pepper? how many eggs per sandwich" Is the bread special? Cook the eggs runny or dry? Why do people like them so much?

No ketchup, just salt/pepper. No butter as the eggs are coated in olive oil. For 2 us I scramble 5 eggs. Good crusty Italian bread-like subs/hoagies. I like mine scrambled soft or loose.

The flavors and simplicity make them special.

Some add potatoes. It's something you'll find on all pizza place menus in NY and NJ.

Didn't sleep much last night---not sure why..ugh! Have an upset tummy today so I am not at all sure what I am making for dinner yet. Maybe stroganoff with some wide noodles, garlic toast and tomatoes. Sure hope this is just a morning thing and it doesn't stay with me all day. We have to do a pretty big shopping today to get prepared for the upcoming storms. Just want to be prepared! Things like animal food! Ha! Also want to fillup the truck and get some extra gas gor the generator, again, just in case! Not really worried just not being to relaxed about the whole situation.

Not at my age!!! Ha! If it is I have to go into the world book of records!! Just sometimes I may feel poorly when I get up but as the day wears on I seem to feel ok---probably it's from sleeping poorly last night.

Those egg subs sound wonderful---must try them!
