We didnt end up going out last night so I fixed roast chicken and squash and fresh kale plus steamed rice as the starch...for my DP. My taste buds must be getting used to the reduced fat, sugar in my healthy diet.....it is tasting and smelling delicious--the oven roasted chicken breast was delicious....moist and juicy and the butternut squash that I roasted with it .... was every bit as good as mashed with gobs of butter and brown sugar. I could get used to this. Good thing....I am in for the duration.
Great Elston-yesterday was my "test of will" as it was a miserable wintry day and I prevailed. Had 2 small cabbage rolls and salad. While Mr. L had mashed and biscuits.
SKBS how about a beef stew loaded w/veggies??? Meatloaf?

Good for you......I used to love mashed potato with cabbage roll....no more; there is already some rice in the filling so I tell myself I don't need more.
In truth I thnk mashed potato will be part of my past except maybe on thnksgvg. ... Those highly buttered and rich vegetables.....I have eaten my share....now its time to let someone else have a chance.

Good for you elston! I've cut back on using as much butter and sugars in our cooking this last year just to be healthier and I haven't really noticed a lot of difference in the flavors either. Sometimes I think we tend to "cover-up" the flavor of the food with adding other things and food in itself tastes really good! Also spices seem to bring out some of those great flavors without the fat! The way you cook you could make cardboard taste good!!
Skbs, for a cold winter dinner I always like to have something that warms the house and fills it with great smells so I usually try to make something that cooks hours--like a pot roast! It warms the soul as well as the house! Just anything that cooks for a long time!!
Probably have to go to the (shutter) grocery store today. I don't have the needed ingredients to make the fudge! Now that's a good reason to go!
Lacey, let us know when you hear anything about your house--I'm still crossing everything for you! How is your hubby feeling today?
Too bad I can't have a 4-course-dinner like we had on Saturday:
1 course: red cabbage cream soup
2 course: fried salmon with bell-pepper and mango chutney
3 course: a slice of pork baked in bread crumbs stuffed with mushrooms + broccoli with sauce hollandaise + some special potatoes
4 course: icecream pralinés on strawberry mousse
It was soooooo yummie!
We still have potatoe dumplings left over from yesterday's lunch. These I will fry with some oil, egg and herbs. DH will get a slice of meat and some potatoes.

Braised beef shanks or Osso Buco are both GREAT cold weather comfort dishes if you have a day's warning. They both seem to need a good night's sleep to be at their best
